STARTERS



"Starters are those appetising titbits that are served either after a soup, as it is done in Tuscany (which seems to me more sensible), or, before, as they do it in other parts of Italy" (Pellegrino Artusi, Science in the kitchen and the art of good food).

As the word itself explains, a starter is anything which is served at the beginning of a meal, usually important lunches or dinners. However, it can be a protagonist on any occasion, even informal gatherings of friends and at the restaurant. Italian cuisine has a great variety of starters, both typical or coming from other parts of the world.
Whether a gift from the sea or the land, game- or vegetables-based, starters can be served -hot or cold, raw or cooked - as an aperitif or during the meal.
At "Seghezzo" we offer a great choice of delicious starters to begin lunch or dinner with the right note, or welcome your friends creating the right cheerful atmosphere around the table.

Seafood starters

Put on your table the darting glares and aromatic fragrances of the Mediterranean sea with lemon anchovies, soused anchovies or perhaps serve a starter made up by tasty eels or capon magro (seafood pie); you can also let your fantasy fly over the sea and land with seafood salad, octopus with potatoes, shrimps and artichokes, or surprise your guests with soused whitebait, or a fish pie enriched by prawns or a salmon mousse; or else try to compare our

fresh marinated salmon or dill-marinated salmon.

Vegetable and meat starters


If you prefer the flavours coming from the vegetable garden, the woods or the farmyard, our Chef at "Seghezzo" has selected for you a choice of starters based on national and international recipes and ingredients. You can choose to alternate meat dishes, such as delicate chicken galantine, chicken salad and ox tongue in a green sauce, with some earthier starters such as mousse of ham in jelly or mousse of duck, pistachio nuts and liver pate; or else, with those genuinely derived from the fruits of the land: marinated Boletus mushrooms, or aubergine and ricotta pie; you can also settle on a Capricciosa salad or a multicoloured, triumphant Russian salad (mixed vegetables in a mayonnaise sauce).

 FIRST COURSES

We offer a lot of first courses, which our Chef has chosen among typical Ligurian recipes and those of the great Italian culinary tradition, elaborated by his fantasy and experience to meet the new nutritional trends.
Plenty of ideas and solutions that can be mixed together, or associated to different main courses according to your taste or our Chef's advice. Choose some of the best traditional Ligurian dishes: Ligurian cannelloni, Genoese minestrone, lasagne with pesto (basil sauce) and several types of gnocchi:
gnocchi with pesto, ricotta and spinach gnocchi, gnocchi with Bolognese sauce, gnocchi with asparagus, gnocchi with fontina (Swiss style cheese), three-coloured gnocchi with ham and peas, woodcutter's gnocchi (with mushroom sauce), gnocchi Roman-style, semolina gnocchi with spinach;if you love international cuisine, try our crespelle, pasta stuffed with vegetables, artichokes and prawns or spinach, zucchini and ricotta (a kind of cottage cheese). Try our pasta specialities: agnolotti with smoked cheese and aubergines, traditional lasagne or salmon lasagne, lasagne and aubergine pie; talking of aubergines, try for a change a first course of Parma-style aubergines.

If you want a light first course, try our pasta or rice salads; and if you feel like having a soup, in our shop you will always find the famous Genoese minestrone, spelt and bean soup, or pasta and beans soup.Use our polenta as a basis for your own or typical recipes, or try
our polenta (maize flour) with stockfish; we also make a delicious polenta pie.



 MAIN COURSES

Our main courses are remarkable because of their special preparation and presentation.
Whereas variety rules as concerns our first courses, originality is king as regards main courses. Meat, fish and vegetables are elaborated to create tasty and unusual dishes. Here are some of our main courses: stockfish in tomato sauce, cuttlefish with peas, spicy chicken in tomato sauce, soft roast turkey, succulent ossobuchi (stewed shin of veal), special Mexican roulades, rich chicken roulades with tomato sauce.

As well as scrumptious first and main courses, Seghezzo suggests a vast assortment of cakes and small cakes for any occasion. You can choose a soft and fragrant apple pie, a sweet-scented pear tart; try our sweet, delicious Strudel: it will certainly stand out on any table!
